Chicken recipes


Artichoke chicken

ok! here is the Almond Chicken recipe for crock pot:

-1 can (14 oz) chicken broth
-1 slice bacon (diced)
-2 Tbls butter
-3 or 4 boneless skinless chicken brst.
-1 1/2 cups celery
-1/2 onion (or a whole if you like more)
-1 can sliced mushrooms
-2Tbls. soy sauce
1/2 tsp salt

Pour chicken broth in crock pot. Let cook on high while preparing other vegetables.
Fry bacon till crispy. quickly saute celery, onion and mushroom just until limp. Add all to crock pot. 
Add chicken to pot, frozen or thawed. Add soy sauce and salt and stir well.  cook on low 6 to 8 hours or high 3 to 4 hours.
Serve over rice with slivered almonds over top.


Artichoke chicken:

1/2 lb. fresh mushroom
4 chicken breast
14 oz. can artichoke hearts
1 can chicken broth or bullion
1/4 cup butter or marg.
1/4 cup flour
1/3 tsp of salt and pepper
3/4 cup half and half
1/2 cup Parmesan cheese
2 tsp. of cooking sherry (or apple juice)
1/2 tsp. crushed rosemary

Boil chicken in broth till cooked.  save broth, cut chicken into cubes.  In skillet saute mushrooms, artichoke and chicken till mushrooms are limp.  Add mixture to 9x13 pan.
In sauce pan, melt butter. Add flour and stir. Continue stirring while adding half & half, chicken broth.  Cook until sauce thickens then blend in cheese, rosemary and sherry.  Add to chicken mixture in 9x13.

Cook @ 325 degrees for 30 minutes
This is also good served with rice.  Add a asparagus and you have a gourmet meal.
